Pesto & Arugula Caprese Sandwich
4 artisan rolls
2 Cups Florida Fresh Herbs Arugula
2 Cups sun dried tomatoes
1/2 Cup Florida Fresh Herbs Basil Pesto (recipe here)
8 oz. fresh mozzarella
Salt and pepper to taste
Lightly toast rolls. Spread 1 tbsp basil pesto on each side of the rolls. Layer arugula, sun-dried tomatoes, and fresh mozzarella onto the rolls. Add salt and pepper to taste. Serve immediately and enjoy!
