Pea and Mint Soup

1 Tbsp olive oil
1 white onion
1 baking potato
4 cups frozen peas
3 ¼ cups vegetable stock
1 Tbsp Florida Fresh Herbs Mint
Salt and pepper to taste

Optional: croutons, coconut cream for garnish



Add the olive oil to a large pot on medium heat. Dice onion and saute until softened. Peel and dice baking potato. Add to pot and cook for 5-7 minutes. Add vegetable stock and bring contents to a simmer for 10-15 minutes. Then, add peas and allow to simmer for an additional 5 minutes. Add your Florida Fresh Herbs Mint and blend until you reach a desired consistency. If soup is too thick, add more vegetable stock to thin it out.Top with your favorite croutons, a few Florida Fresh Herbs Mint leaves, some coconut cream, and enjoy! Tag us in your creations.
