Mushroom & Arugula Bruschetta

1 baguette, sliced
3-4 tbsp butter, divided
1 package cremini or portobello mushrooms, washed and sliced
8 oz. spreadable cheese, such as brie or burrata
2 cups Florida Fresh Herbs Arugula
Salt and pepper to taste

Heat oven to 350 degrees fahrenheit. Spread butter on the top of each baguette slice and place on a baking sheet. Bake for 5-10 minutes until golden brown. While the baguettes are toasting, melt the remaining 1 tbsp of butter in a saucepan on medium-low heat. Sauté mushrooms for 5-7 minutes, or until they lightly brown. Remove the baguettes from the oven and set on a plate. Spread brie or burrata cheese on each baguette slice. Top with mushrooms and Florida Fresh Herbs Arugula. Add salt and pepper to taste. Serve immediately and enjoy!
