Mint Chocolate Chip Cookies

Ingredients:

1/2 cup (1 stick) unsalted butter

1/2 cup firmly packed fresh mint, roughly chopped

1/2 cup firmly packed dark brown sugar

1/2 cup granulated sugar

1 egg, at room temperature

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon fine sea salt

heaping 1/2 cup semisweet chocolate chips

Directions:

Start by placing the butter and mint in a saucepan over medium heat. Melt butter and stir occasionally. When you can first smell the aroma of the mint, turn off heat and steep for 30 minutes. Once steeping has finished, strain butter. Make sure to press or squeeze leaves to get all the oils and essence out of them. Pull out your standing mixer, add butter and sugar. Beat mixture until it is light and creamy. Next, add egg and vanilla. Beat. In a separate bowl, add together dry ingredients, flour, baking soda, and salt. Slowly add dry ingredients to mixer while beating. Once mixing is complete, fold in chocolate chips. Next, remove dough from bowl, wrap in plastic wrap, and chill for one hour. Once chilled, preheat oven to 350 and line two baking sheets with parchment paper. Separate dough into equal parts, place on baking sheets, and cook for 10-12 minutes or until golden brown. Cool and ENJOY!
