Mint Cacao Pie


1 cup almonds, ground
¾  cup dates, pitted
¼  cup cacao powder
¼  cup cacao nibs
1 tsp pure vanilla extract

2 ½ cups cashews
1 ½ cups packed Florida Fresh Herbs Mint Leaves
1 cup water
⅔ cup tbsp agave
1 tsp pure vanilla extract
Pinch of sea salt
3 tbsp cacao butter, melted
2 tbsp coconut oil, melted


CRUST: In a food processor, mix ingredients until dough forms. Add 1-2 teaspoons water if needed. Press the mixture into a 6" pie pan and set aside.

FILLING: In a blender, combine the cashews, mint leaves, water, agave, vanilla, and salt until smooth. Add the cacao butter and coconut oil until incorporated. Spread the filling into the chocolate crust. Chill it in the fridge or freezer for at least 6 hours, or until it is slightly firm to the touch. Garnish with whipped ream, Florida Fresh Herbs Mint leaves, cacao nibs, and a cherry. Serve and enjoy!
