Italian Arugula Salad
4 bunches Florida Fresh Herbs Arugula
½ cup extra-virgin olive oil
1 lemon, juiced
Salt and freshly ground black pepper
Freshly grated parmesan cheese
½ cup pine nuts
In a large serving bowl, drizzle arugula with olive oil. Squeeze in the lemon juice and sprinkle with salt and pepper. Toss until well mixed and taste for seasoning. Transfer into serving bowls and garnish with parmesan cheese and pine nuts. Serve and enjoy!
