Fruit & Mint Chia Seed Pudding
2 cups coconut milk
1/2 cup Chia Seeds
1/2 tsp vanilla extract
Optional: 1/4 cup maple syrup or any natural sweetener
1 cup fresh fruit
Florida Fresh Herbs Mint leaves
Blend coconut milk, vanilla extract, and sweetener (optional) in a blender until smooth. Whisk in chia seeds. Pour mixture into a jar or glass container and place in the refrigerator for at least 4 hours or overnight. Top with fresh fruit and a few sprigs of Florida Fresh Herbs Mint leaves.
