Egg, Avocado, and Quinoa Arugula Salad

INGREDIENTS:

2 cups Florida Fresh Herbs Arugula
1/2 cup cherry tomatoes, sliced
1/2 avocado, sliced
2 hard boiled eggs, peeled and sliced
1 Tbsp ground brown flax seeds
1/2 cup cooked quinoa
Juice from 1 lime

 

DIRECTIONS:

Cook quinoa according to package directions. Layer quinoa, Florida Fresh Herbs Arugula, cherry tomatoes, avocado, eggs, and flax seeds. Drizzle with lime juice and enjoy!
