Egg and Pesto on Toast
2 pieces of bread, toasted
4 tbsp Florida Fresh Herbs Pesto (recipe here)
Florida Fresh Herbs Basil for Garnish
In a saucepan, bring water up to a boil, then lower it to a rapid simmer. Add the eggs to the pot. Cook for five minutes for a runny yolk, or seven minutes for a more firmly set yolk. Toast bread and spread 2 tbsp of Florida Fresh Herbs Signature Pesto on each slice. Slice egg in half and arrange on toast. Garnish with fresh basil. Serve immediately and enjoy!
